Quick & Easy Green Chile Chicken Quesadilla

Celebrating Cinco de Mayo with these green chile chicken quesadillas!  To make this a quick and easy recipe I used Costco's rotisserie chicken breasts.  Priced at $4.99 their rotisserie chicken is easily one of their best deals.  I can easily make 2 sometimes 3 meals out of it for my family of 8.  All you need to do is dice it up since it is already cooked.  Their canned chicken is also a great back up option for this and other recipes calling for chicken.  The best part is if you are vegetarian just leave out the chicken and sub in a vegetarian options such as black beans, chick peas, bell peppers, mushrooms, etc.

Green Chile Chicken Quesadilla Recipe

If you haven't tried adding green chiles to your dishes give it a try!  It is the perfect way to add flavor without any fat and gives your dish a little kick. This easy and quick recipe is perfect for our busy life. Top with avocado or guacamole, salsa, sour cream, queso, etc!  They are all great. Quick and easy 30 minute meal!  This green chile chicken quesadillas are the perfect weeknight meal for yourself or a large family.

What You'll Need:
    Ingredients
  • 2 cup Chicken breast (cut into bite-size pieces and dried overnight)
  • 1 cup shredded cheese
  • 1 can diced green chiles (Rio Luna)
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/4 cup onion (diced)
  • 1/2 tsp black pepper
Instructions
  1. Step 1

    Cut your chicken breast into cubes.

  2. Step 2

    Dice up your onion

  3. Step 3

    Open and drain your can of green chiles.

  4. Step 4

    Heat up a frying pan to medium high.  Saute onions for 2-3 mins.  Add in cubed chicken and seasoning.  Add in green chiles.  Stir. 

    After 5-10 mins.  Place chicken mixture into a bowl. 

  5. Step 4

    In your pan, heat up your tortilla.  

    Sprinkle cheese.  Add in chicken mixture.

    Fold in half.

  6. Step 5

    Remove from heat and place on cutting board.  Slice in half and top with your favorite toppings.  Serve & enjoy!

  • Cook this recipe at medium heat.
  • Use fresh ingredients for better taste.
