Avocado toast is basically an opened faced sandwich made with toasted bread and mashed avocado. It can be as basic as that since Avocados are known to be a heart healthy fat, source of fiber and vitamins or you can get a little creative. Mixing up a variety of toppings in addition to any mix ins that you may choose to add in order to create different flavors to go with the avocado on toast.
Today I experimented making avocado toast 4 ways using a little short cut. I used premade guacamole instead of mashing up fresh avocado. Last month Costco had prepackaged individual packets of guacamole on sale so I picked up a few boxes. The first two went quickly but these last two haven’t so it was time to get creative to eat them up. I also cut my toast in half before adding the different toppings.

These all ended up delicious and my 4 year old was eager to test out a few bites as well. He declare they were also all “so good”!
To make my Avocado toast 4 ways you’ll need to toast the two slices of bread and then cut in half. You’ll top each half with a generous amount of pre made guacamole.
Top 1st half with everything by seasoning to taste.
Top 2nd half with cucumber slices, smoked salmon and thinly sliced red onion (optional)
Top 3rd half with a fried egg (sunny side up soft is my favorite)
Top 4th half with diced tomatoes, diced red onion, small pieces of mozzarella cheese, fresh basil, drizzle of balsamic glaze and salt & pepper to taste.
